I must admit, I was afraid these caramelized onion and horseradish mashed potatoes would be too spicy for my family to eat.  Not to worry! The spicy stuff adds just enough flavor to make them awesome!  Perhaps add a little bit of the horseradish mixture at a time to make sure they are just right for you!

Ingredients needed:

butter onion brown sugar white balsamic vinegar (optional) baking potatoes whole milk Dijon mustard lemon juice horseradish mayonnaise salt

Stir the Dijon- caramelized onion mixture into the potatoes in the pan. They’re ready to serve!

If you are a lover of caramelized onions, you will most definitely be into these mashed potatoes. If you aren’t really an onion lover, then these might not be for you. I think they’re amazing!

They’re not so smooth and creamy like traditional mashed potatoes because of the added onions. But those onions add some pretty delicious flavor (along with the Dijon and horseradish, for sure).  These caramelized onion mashed potatoes would be fabulous served on their own with a dab of butter- alongside roasted chicken or grilled meats.
