Yeah, I’m eating light. I’m in the midst of an exercise challenge of sorts, which I’ll share with you once it’s COMPLETE (soon!) Even though I’m eating light, I still have to chow down on some majorly good sweet stuff now and then. You can’t deny yourself completely, right? I found this recipe in an old Cooking Light cookbook that I had hiding somewhere on the very back of my cookbook shelf. Great discovery! These are the most chocolatey, fudgy, low calorie kind of cookies that you’ll ever come across if you’re eating light. Chocolate stuff of any sort tastes SO GOOD when you’ve been laying off dessert for a few days. MAKE THESE!
Truth be told, I baked these last weekend during the playoff games. Our super cool football-fan neighbor “Dave” came over to hang out with us and watch the games. I prepared some light appetizers, and I really wanted to have a dessert… but I didn’t want anything MAJOR lying around. And by “major,” I mean evil desserts with off-the-charts calories. These were perfect (and Dave loved them too!)
Like I said- you get a great chocolate fudge bite in these cookies without breaking the bank on the calorie count. Each cookie has just 76 calories. I can handle that! In fact, I think I can handle two of that to get my sugar craving satisfied. Enjoy… with slightly less guilt 🙂
