2 lb potatoes, about 6

3 tbsp butter

1 tsp salt

½ tsp pepper

¼ cup flour

2 cup milk

paprika

fresh parsley, chopped

Peel and slice potatoes into about 1-inch pieces.

Add to a medium pot and cover with water, bring to a boil and then reduce heat and simmer for about 15 minutes until fork tender, remove from heat, drain and place into serving bowl, set aside.

In another medium sauce pan add your butter and melt.

Stir in the flour, salt and pepper.

Slowly add in the milk, whisking consistently until smooth and heat until thickened.

Pour over potatoes and gently toss to coat.

Sprinkle with paprika, parsley and salt and pepper.
