1½ lb Italian sausages, or sausages of your choice

1½ lb potatoes, peeled and medium diced

½ lb red onions, large dice

8 oz cherry tomatoes, or grape tomatoes, halved

8 oz button mushrooms, fresh, halved or quartered depending on size

4 oz bell peppers, preferably red or green, large dice

1 cup spinach, fresh, preferably baby spinach

¾ cup cheddar cheese, shredded

3 tbsp olive oil

salt and ground black pepper, to taste

cooking spray

For Serving:

2 pcs sunny-side-up eggs

parsley, chopped

Preheat your grill and grease with cooking spray. Once hot, grill your sausages until fully cooked and grill marks present on both sides, roughly 8 to 10 minutes.

Set these aside to rest briefly, then slice diagonally, roughly 4 to 6 slices per sausage.

Heat up your oil in a large skillet over medium heat. Add the potatoes.

Saute until tender. Add the onions, mushrooms, and bell peppers.

Saute until vegetables are caramelized and potatoes soften roughly 8 to 10 minutes.

Add the tomatoes and spinach. Continue sautéing until spinach starts to wilt and tomatoes blister, another 5 minutes.

Add the sausages and cheese. Saute briefly, just until the cheese briefly melts.

Adjust seasoning to taste with salt and pepper. Serve your Denny’s ultimate skillet with eggs. Garnish with parsley. Happy eating!
