Preheat oven to 350°. In a large bowl, combine flour, baking soda and salt. In a small bowl, whisk eggs, bananas, sugar, applesauce, oil and vanilla. Stir into dry ingredients just until moistened., Transfer to two greased 8x4-in. loaf pans. Sprinkle with walnuts. Bake until a toothpick inserted in the center comes out clean, 45-55 minutes. Cool for 10 minutes before removing from pans to wire racks.

Preheat the oven to 350 degrees Celsius. Use butter to grease up a loaf pan. Mix the dry ingredients and wet ingredients into separate bowls. Fold the wet ingredients into the dry ingredients. Mix in the walnut pieces and chocolate chips. Some people use one or the other, but I like to use both to make this bread extra delicious. Pour the batter into the loaf pan and bake for 45 minutes. NOTE: I find that with some ovens, this is not enough time to bake the bread thoroughly. What I usually do is pour the batter into two loaf pans and reduce the time, or I bake the bread until it no longer “jiggles” when I shake the pan gently. This usually takes about 1-1/2 hours. Watch it carefully as it bakes! It’s worth the time.
