4 cups chicken breast, skinless and boneless, cooked and sliced into 2-Inch dice
2 cups celery, diced small
1 cup yellow onion, diced into small pieces
½ cup mayonnaise
2 tbsp Dijon mustard
2 tsp dill, fresh, chopped
7 red delicious apples, large, fresh, washed and dried
2 tbsp lemon juice, fresh
salt and ground black pepper, to taste
To serve:
1 tsp raisins, per serving
1 tsp cashew nuts, per serving
In a large bowl, combine the chicken breast, celery, onions, dill, mustard, and mayonnaise.
Season with salt and pepper to taste and adjust accordingly. Then set aside in a chilled area for at least one hour.
Slice the top portion of each apple, then brush it with lemon juice.
Using a small scoop or grapefruit spoon, remove the insides of each apple. Make sure to leave about ⅓ from each apple to firmly hold the salad.
Brush the inside of each apple with lemon juice. After doing that, slice just the bottom portion of the apple so it can stand firmly on the serving plate.
Equally stuff roughly 3 ounces of chicken salad stuffed per apple. Then on pre-chilled plates, place the stuffed portion of the apple on the sliced portion.
Serve the stuffed apples immediately or chill them for 15 minutes and serve. Feel free to garnish it with raisins and cashew nuts.
After that, cover it diagonally with the sliced top portion. Enjoy!
