So a potato side dish always works! These are delicious. Simply roasted potatoes are mixed with a flavorful herb mixture.
How to make Lemon and Herb Roasted New Potatoes:
The full, printable recipe is at the end of this post. The first step is making the herb mixture. Use a food processor or a powerful blender. Add fresh parsley, fresh rosemary, garlic, lemon zest, lemon juice, olive oil and salt. Process this mixture until well-blended and smooth.
Cut your potatoes in half, and add them to a bowl. Toss with olive oil, oil, salt and pepper. Spread the potatoes out on a foil or parchment-lined baking sheet. Roast for 25 minutes, until soft, tender and lightly browned. Put the potatoes back into the original bowl, and add the herb mixture. Toss to coat the potatoes with the herbs.
Transfer the potatoes to a bowl, and serve!

This potato side dish recipe is easy to make ahead. Just prepare it all, and transfer it to a bowl. Heat in the microwave (or in a skillet on the stove) when ready to serve. Alternately, you can roast the potatoes and process the herb mixture separately. Then heat the potatoes and toss with the herbs when ready to serve.
