4 egg whites, divided
4 slices Canadian bacon
2 slices American
1 pcs English muffins, or biscuits, preferably whole-wheat
salt and pepper, to taste
cooking spray
For Garnish:
parsley, chopped
Grease your skillet with cooking spray and heat over medium.
Add your bacon and sear until evenly cooked on both sides, no more than 3 minutes per side. Set aside.
Reduce heat to low, add 2 egg whites, and cook for 3 to 4 minutes until firm. Repeat until you have cooked all your bacon and egg whites.
Toast your muffins or biscuits while waiting. You can also use the same skillet for this.
Once muffins or biscuits are toasted and egg whites cooked, assemble your sandwich. Place your bacon at the bottom slice, followed by 1 slice of cheese, and lastly your egg.
Top each assembled muffin with other muffin half and garnish with parsley. Enjoy!
