Why are these dubbed as mountain Christmas cookies? Well, we baked them when we were spending celebrating the holidays up in the snowy mountains of Colorado and they were eaten up quickly. So we kept the recipe, and now we bake them every year with that nice memory.
Ingredients needed:
butter shortening brown sugar baking soda eggs vanilla extract all purpose flour holiday M&M’s chopped pecans (optional)

Cool the cookies for 1 minute on the baking sheet. Using a wide spatula, transfer the cookies to wire racks to cool completely.
These Mountain Christmas Cookies are hearty enough to nibble on after a long hike or a full day on the slopes or a day of holiday shopping. Pecans are added in for a little protein boost! You don’t have to add the pecans, but the extra crunch is nice. I find that if you use finely chopped pecans then that is best. Leave out the nuts if anyone is allergic. Enjoy!
How to store Christmas cookies:
To store, place the cookies in layers separated by wax paper in an airtight container; cover. Store at room temperature for up to 3 days or freeze for up to 3 months.
