If you can get your hands on some halibut, this is a great recipe to make with it. Prosciutto and halibut are a beautiful, delicious pairing! And although it sounds fancy, this prosciutto roasted halibut is actually very easy to make.

Ingredients needed:

halibut salt/pepper fresh thyme prosciutto  olive oil shallots dry white wine butter

How to make Prosciutto Roasted Halibut:

The full, printable recipe is at the end of this post. Preheat the oven to 400 degrees F. Lay two pieces of prosciutto on a work surface. Place a halibut filet in the middle of the prosciutto. Sprinkle it with salt and pepper and a little bit of fresh thyme. Wrap the prosciutto around the halibut like a blanket. Repeat with all of the prosciutto and fish.

Heat the oil in the pan. Add the prosciutto wrapped halibut and cook until the prosciutto has browned on all sides. Then transfer the skillet to the oven, and roast until the fish is cooked through. Transfer the fish to a platter and cover with foil while you prepare the sauce. Brown the chopped shallots in the pan. Add wine and fresh thyme. Simmer for a minute or two until the sauce is reduced. Then whisk in the butter.

Top individual servings of the prosciutto roasted halibut with some of the sauce. Serve with chilled asparagus with feta vinaigrette (pictured) or your favorite side dish. Enjoy!
