When it comes to vegetable soup recipes, this one is a good one. There are so many delicious veggies in it! Feel free to change things up as you see fit. Use fresh oregano instead of thyme. Add in your own favorite veggies (or leave out the ones you don’t care for). And you can leave out the cheese entirely to make this a dairy free soup.
